Our Story

The Gentil Verde was founded in 2017 with the intention of recovering some of the values of a traditional rural culture seemingly more and more forgotten.

Our farm business preserves and respects the earth and its animals and produces authentically typical local foods, deeply connected to the area of the Marche Region. We cultivate our lands with exclusively organic and sustainable methods that enhance biodiversity. The varieties of grains and legumes that we sow on our 50 hectares are carefully selected with a preference for those antique grains that are healthier, more easily digestible and have higher nutritional value. From our raw materials – grains and dried legumes – we obtain stone-ground flours with which we make breads and oven baked goods. We also gather spontaneous wild fruits and flowers from the area, which we use to make special jams and juices.

We organize cultural and social events, trying to nurture both body and mind and desiring to cultivate and promote beauty.

Our fields are cultivated with cereal varieties ideal for organic farming. Thanks to their height, weeds struggle to thrive, enabling us to avoid the use of pesticides.

Care ...

The land comes first. Without it, there would be no work, and no us. The land must be constantly listened to, understood, respected, and loved.

Everything is “slow”: the wait for the harvest, the careful craftsmanship behind our handmade products, and the kind of tourism we aspire to.

Our Philosphy

We rotate our crops in the fields, including cereals, legumes, and forage plants. The legumes and cereals are then packaged for use in delicious cold salads and soups.

We mill our wheat and spelt exclusively using a stone mill to preserve the aromas, flavours, and nutritional quality of the flours. We produce bread and baked goods with our flours, using sourdough for natural fermentation and baking in a wood-fired oven.

We are committed to biodiversity, practising beekeeping and gathering wild berries and flowers, which we use to create exquisite jams, syrups, and honey.

Social ...

Il Gentil Verde is also involved in social farming, providing space, value, time, and opportunities to people facing economic, health, or social disadvantages. It builds networks and co-designs with socio-cultural associations to improve the quality of life for individuals in situations of temporary or permanent difficulty.

Experimentation ...

We have learned from and embraced the best aspects of the Marche tradition, presenting them with skill and patience, using modern machinery, but never losing the hands-on connection with the material: from shaping the loaves to cutting and the final baking.

Culture ...

We aim to present food as nourishment not only for the body but also for the mind and spirit. Food is not merely "filler," but carries with it history, time, identity, culture, and much, much more.
